Origin: Jellof rice is originally from Africa , It is an Africa food. Jellof rice is believed to be a Nigerian delicacy but fully adopted all over the Africa continent. I stand to be corrected. Without further ado, Let’s dive right in into the recipe of the day! (Jellof Rice).
Ingredients:
Rice (As needed)
Meat or Fish of your choice
Salt
Maggi
Onion 🧅
Pepper of your choice
Curry and other seasoning of your choice
Tomatoes 🍅 fresh and tin
Groundnut oil
Those are the basic ingredients, You can add other things.
Note: For proteins in your jellof rice, Chicken or turkey is preferable. You can also use only fish or add meat and fish together. The choice is absolutely yours to personalise your jellof to your taste.
Preparation:
Season your meat or fish with a teaspoon of salt, one seasoning cubes, spices of choice and onions.
Put on fire and let it boil for 10 minutes if it’s fish and 20 minutes if it’s meat.
Put aside the meat or fish stock in a bowl.
Parboil your rice, put water in a pot, add some cups of rice that will be enough for you depending on the number of people you are cooking for and allow boiling for 5 minutes then pour it out in and wash throughly till clean then set aside in a clean bowl.
Take out your meat or fish from the stock and fry and set aside. Once you are done with frying the meat or fish, reduce the oil to 250ml (1 cup) just add the remaining one cup of sliced onions, stir for 1-2 minutes, add the ground tomatoes. Cook the jollof rice with the same oil you used to fry the meat or fish. Fry the tomatoes for about 15 minutes, Fry it until it is done and doesn’t bite. When the tomato is done, add the meat or fish stock water to the fried tomato in the pot, And add salt to taste, Maggi and other spices of choice, Add some water that is needed. Stir and taste to feel if it tastes good to your taste, At this point you should be ready to add your parboiled rice. Cook for another 20 minutes, Your jellof rice is ready to be served.
